The ingredients needed to make Flan:
  1. Prepare 2 eggs
  2. Get 250 ml whole milk
  3. Make ready 40 g sugar
  4. Get A few drops of vanilla essence

Flan, or crème caramel, is a creamy custard dessert topped with caramel that's popular in Mexico, Spain and many Latin American countries. It's known for its smooth and creamy consistency that's achieved by cooking the custard in a water bath, or a bain-marie or baño-maría. Doing so creates steam in the oven which gently and evenly. My family loves Flan, I usually bake it in a round cake pan, But you can use ramekins.

Steps to make Flan:
  1. Put the eggs and the sugar in a bowl, and mix until the yolks have blended with the whites and the sugar
  2. Slowly add the milk (cold) to the mix, pouring 1/5 at a time and mixing in between pours
  3. Add vanilla essence (to taste, I use 10 drops or a teaspoon) and mix
  4. Pour mix into small containers (50ml to 100ml in size), using a sieve not only to remove the parts that didn’t mix well, but to prevent air bubbles to form in the mix
  5. Cook in microwave in intervals of 30 seconds, checking for its consistency each time the timer finishes. It should be around 2 min 30 sec total, or 5 cycles, but this varies from microwave to microwave
  6. Once cooked, let the flan rest 30 minutes over the counter, and then move to the fridge for at least another 30 minutes
  7. Enjoy with a spoonful of dulce de leche for an Argentine twist

This recipe is NOT a hard as it looks. For best results make Flan a day ahead to let the caramel form a slightly liquefied layer. Time does not include cooling time. Flan (also called crème caramel or caramel custard) is a custard dessert with a layer of caramel sauce. Flan has been a staple of Mexican and Latin American cuisine since Spaniards brought it to Mexico during the Spanish occupation.
