I woke up this morning and saw a recipe for "Zucchini Flan" in the NY Times Food section. It was perfect because I had a whole bag of little zucchinis in my fridge that I needed to use up! It turned out nice so I figured I'd write it down :) I did.
Zucchini Flan with Fresh Basil is one of the most favored of current trending foods on earth. It’s appreciated by millions daily. It’s simple, it is quick, it tastes delicious. They are nice and they look fantastic. Zucchini Flan with Fresh Basil is something that I’ve loved my whole life.

The ingredients needed to make Zucchini Flan with Fresh Basil:
- Take 600 g zucchini, sliced thin
- Prepare 1 Tbsp cooking oil
- Prepare 4 eggs
- Take 500 ml milk
- Prepare 1/2 tsp sea salt
- Make ready 1/4-1/2 tsp nutmeg to taste

- Take 1 handful fresh basil, torn into small pieces
- Take 3 sprigs fresh dill or thyme

- Get Optional: Gruyere or favorite cheese (50-100g)
Change the flavor by adding mint or basil to the parsley, or you can choose to spice it up with red pepper flakes or diced chilies. Use a food processor or a mandolin to quickly and easily shred the zucchini, or you can use the large holes of a box grater. Drain and spread zucchini out to cool on a towel. Season lightly with salt and pepper.
Instructions to make Zucchini Flan with Fresh Basil:
- Preheat oven to 190°C/375°F.
- Grill zucchini slices in a grill pan or saute in a frying pan until slightly soft. If needed you can pour in a little water or broth after a few minutes to help "steam" them. Sprinkle with salt.
- Whisk together eggs and milk. Then mix in the salt, nutmeg, pepper, fresh basil leaves and dill/thyme.
- Lightly grease a baking dish with oil and layout the zucchini and onion.
- Distribute the cheese, if using, over the zucchini (I used cream cheese because that's all I had…)
- Pour over the egg mixture
- Bake at 190°C/375°F for 25-30 minutes. The center will still be a little jiggly when done. Enjoy warm :)
Beat eggs and milk with ½ tsp. salt, and then add nutmeg, thyme and basil leaves. Drizzle the zucchini with olive oil, garlic powder, dried basil, and salt. Toss zucchini with a spoon until evenly coated with ingredients. Spread the zucchini on the lined baking sheet, making sure to leave a bit of space between pieces. Sprinkle the zucchini with freshly grated Parmigiano-Regianno (parmesan).
