  2. Take 75 g grated courgette/zucchini
  3. Make ready 50 g chopped broccoli
  4. Make ready 3 medium eggs
  5. Make ready 25 g Cheddar cheese
  6. Prepare 1 tbsp plain flour
  7. Get 1/2 tsp mixed herbs or oregano. (I used oregano extract spray)

Take the broccoli and snap off tiny florets before popping them into a saucepan of boiling water. Meanwhile, in a large bowl whisk together Drain the broccoli and add to the pan with the pepper. ADD broccoli mixture, cheese and green onion; MIX well. COAT same skillet with cooking spray and HEAT over medium heat until hot.

Steps to make Broccoli and Cheese Frittata Fingers:
  1. Preheat the oven to 180c. Grease and line a baking dish with greaseproof paper.
  2. Heat the olive oil. A frying pan. Add the courgette and Broccoli and fry lightly for 3-4 minutes or until vegetables are soft.
  3. In a bowl mix the cheese, eggs, flour and herbs. Add the cooked vegetables and mix until we'll combined.
  4. Pour the mixture into the baking dish and bake for 15 minutes.
  5. Remove from the oven and allow the Frittata to cool until cutting into fingers or squares.

For an impressive presentation, invert frittata onto a plate to show it's nicely browned bottom. For a quick dinner, add slices of chopped ham or chicken. I think the broccoli overwhelms the eggs ( a lot) and the parmesan cheese on top didn't add enough flavor.
