  1. Take a big sauce pan or a pot, fill water up to 3/4 th level. Keep this on high heat and bring it to a boil. Add 3 pinchs of salt and 1 tsp of sesame oil. When the water starts boiling add the uncooked rice sticks. This will start frothing after 2 minutes, at this stage switch off the heat and drain the sevai into a colander and wash it under running water.
  2. Take a wok or kadaai, keep it on medium heat. Add sesame oil, wait for it to attain the required heat and add all the other ingredients mentioned under Tempering. Saute this until dals turn brown and green chillies and curry leaves have to fry until crisp. Now add the cooked sevai and stir.
  3. Stir the sevai carefully do not break it or mash it. If you are not comfortable using a ladle to stir I suggest you use an egg beater, it helps in mixing evenly. Garnish it with Chopped coriander leaves and sprinkle required amount of salt. Keep the heat in Low. Squees out the juice of two lemons directly on to the sevai and stir evenly.
  4. Switch off the stove, and serve this hot with your favorite Chips or Vathal.
