The ingredients needed to make Mexican Rice:
  1. Get 4 cup chicken stock
  2. Take 2 cup rice
  3. Take 4 strips each red,yellow,orange bell pepper
  4. Prepare 3 each jalapeno, seeded and diced
  5. Get 1 each red onion, diced
  6. Get 3 clove garlic, minced
  7. Take 1 can 28 oz diced tomatoes
  8. Make ready 1 cup cilantro, chopped
  9. Take 1 salt to taste
  10. Get 2 tbsp olive oil, extra virgin
  11. Make ready 1 tbsp chili powder
  12. Make ready 1/2 tbsp ground cumin
Instructions to make Mexican Rice:
  1. In a medium saucepan add olive oil, rice, onion, bell peppers.
  2. Cook until the rice is almost brown, stir frequently.
  3. Add diced tomatoes, stir and cook for 5 minutes. Then add stock. Also add chili powder and cumin.
  4. Bring to a boil, reduce heat to low, cook covered for 25 minutes.
  5. When done stir in cilantro. Enjoy
