  4. In a frying pan melt 1 oz butter, add breadcrumbs and fry gently until golden brown, put to one side.
  5. In another pan gently melt rest of butter.
  6. Place 1 sheet of filo on a clean dry tea towel (keep the rest under a damp tea towel so they Don't dry out) brush with melted butter, place another sheet overlapping the first by half, brush with melted butter, carry on adding sheets, alternating, and brushing with melted butter until all sheets are used.
  7. Sprinkle breadcrumbs over filo.
  8. Place Apple mixture in a pile along the length of the pastry, about 1 inch from edge. Using the tea towel, roll the pastry up to enclose the filling (like a Swiss roll), tuck the ends underneath and place on the baking sheet with the seam underneath. You can shape into a horseshoe or leave 'long' Brush with remaining melted butter.
  9. Place in centre of oven for 40 -45 minutes until golden brown and crisp, allow to cool, then dust with icing sugar.
  10. Cut into slices and serve. I like mine with decent vanila ice cream but cream or custard works too, your choice.
  11. Option. You can add 2 oz chopped almonds at step 8
