Its so easy to make dosa using the method shared in. Set dosa are usually served with vegetable curry, tomato chutney and coconut chutney. There are different versions and ratios of making set dosas. The version I'm posting here is what my daughter likes best.
Steps to make Adai Dosa With Tomato Chutney(Thakkali Thokku):
- Steps for Adai dosa:-
- In a big pan add all the dals and wash for 3-4 times.
- Add enough water in a pan and soak dala for 3-4 hrs.
- In another big pan add rice and wash for 3-4 times.
- Add red chilies to washed rice and soak in enough water for 3-4hrs.or you can leave rice overnight.
- Drain the water from dal and rice.
- In a mixer jar add red chilies and rice.Add 2-3Tbsp of water and blend into slightly coarse thick batter.
- Transfer the rice batter in a big bowl.
- Add dals and ginger in a mixer grinder.
- Add 2-3Tbsp of water to dals and blend to slightly coarse batter.
- Add dals batter to rice batter and mix well.
- Adai dosa batter is ready.If you want you can rest better for 2-3 hrs
- Heat a non tawa over medium heat and apply 1Tsp of oil.
- Add chopped onion,salt,hing, coriander leaves to batter and mix everything well.
- The consistency of batter is thick,but of spreading consistency.
- Before pouring batter on tawa make sure tawa is hot.
- Pour one laddle of batter and spread it quickly like dosa.Spread thick or thin as you prefer to eat.
- Add 1/2 tsp of oil /ghee actors the edges of adai dosa and cook on medium heat.
- When dosa cooks on one side,the edges loosen from the tawa slightly.
- Flip and cook on other side,cook from both sides until it turns crispy.
- Serve adai dosa hot with tomato chutney or with the choice of your chutney.
- Prepration for tomato chutney:-
- Heat oil in a pan over medium heat.
- Add mustard seeds to hot oil.When it splutters add hing and curry leaves.
- Saute for few seconds.
- Add chopped onions and cook until turns translucent in colour.
- Add chopped tomatoes and salt to cooked onions.
- Mix well and cook until tomatoes turn soft.
- Stir in between to avoid sticking of mixture.
- After 2-3minutes tomatoes turn soft,but there is too much liquid released by tomatoes.
- Stir and cook until mixture turns thick and no water is left in mixture.
- Add chilli powder,sambar powder and turmeric powder.
- Mix well and cook for a minute.
- Taste for seasoning and salt if required add more.
- Turn off the flame and allow it to cool down.
- When cool down down transfer - Thakkali thokku to clean jar.
