- Cut the eggplant into dices, apply salt and deep fry. Keep aside.
- Peel mushrooms and slice them.
- Chop spring onions, whites and greens separate.
- Heat two teaspoons oil in a wok, add chopped garlic, saute till pink, add chopped spring onion whites, saute till translucent, then add dry red chillies, sliced mushrooms. Saute till all moisture evaporates. Now add salt, soy sauce and chilli sauce. Mix well. Add cooked rice and mix well on high flame. Lastly add fried eggplant and spring onion greens. Give a quick stir and serve hot.
