  2. While potatoes are cooking. Dice up vegetables. Once potatoes are soft add 1 table of oil, onion, peppers, garlic and Brussels sprouts and turn up the heat to med so vegetables can cook. Season to taste.
  3. Once vegetables begin to brown make 4 holes in the pot and crack eggs in them. Add a little water to create steam and cover until eggs are cooked but yoke is still runny. Garnish with cilantro and serve with avocado.
